I have been vegetarian for four years. So now, I am ready for the next step. This is a special blog where I am going to document my attempts at being vegan. Actually, more so food I want to make/eat. So yeah. Enjoy.

I’m currently obsessed (and i mean SINGLE WHITE FEMALE OBSESSION) with Isa’s Mac & Shews recipe. It’s by far my favorite mac and cheese recipe on the planet and not only is it great as a mac and cheese, the sauce alone KILLS on a baked potato and broccoli. You’ll make a big plate of that and then drive by Wendy’s and some sad sack will be sitting on the curb out front eating their crappy microwaved potato with radioactive death cheese sauce and you’ll roll down the window and say either:
1) Pardon me, but would you happen to have any Gray Poupon?
OR:
2) HOW DO YOU LIKE THEM APPLES?! (while waving your food out the window, that part is key)
Oh, the friends you will make!

This is one of my breakfast favorites - most of the time I’ll just eat it straight out of the bowl for less carb intake, but the little pitas were calling me today.
All you need is: - one small//medium potato - 1 cup black beans - 1/4 cup of diced white onion (about a handful, I’d say) - garlic powder - chili powder - canola oil  - 3-4 tablespoons salsa (up to your preference)
Bake the potato in he microwave for about five minutes after puncturing with a fork. Cut into small pieces. Make sure the beans are rinsed completely. In a medium size skillet, heat about 2 tablespoons of oil on medium heat.
Add onions and potato first, stirring to fully coat with the oil. After about two minutes, add the beans, and a few shakes of garlic and chili powder. Don’t continuously stir but don’t let it so either - this dish cooks quickly and you want to prevent it cooking onto the bottom of the pan.
When onions become slightly translucent, it’s all ready. Add salsa and mix thoroughly. This makes a great breakfast burrito as well, but can certainly stand alone. Very quick and Scrumdiddlyumptous.
